Fresh from my San Diego trip, I am still drooling over the watermelon salad I had at Sbicca in Del Mar on our last evening. It was the perfect cherry on top of our amazing trip to San Diego. The view of the ocean from our quaint little table left me thinking…. “How are we in the states?? It feels like another world away from Jersey.” Now far from the perfect crisp 70 degree weather, I am determined to prepare a fresh watermelon salad this week, like the Californians would do. I found this little gem from one of my favorite ladies in the kitchen, Ina Garten. It doesn’t matter if you are stuck inside from the Jersey rain or propped up next to the air conditioning unit in Texas, whip up a delicious fresh watermelon salad, close your eyes, click your heels, and hope you will make it back to California some day soon.
