Usually after 2 weeks of begging, I make my Great Grandmother’s pancakes for my boyfriend Jason. I have pretty much ruined box pancakes for him, like my mother did for me. Granny Moose made her pancakes from scratch, without a written recipe, or measuring cups. I have not mastered the skill of eye balling quite yet, but lucky for me Nanny (my Grandmother) watched her, and wrote down the recipe for all the generations to enjoy. This has to be my favorite family recipe. The only change I make, is adding a little vanilla from time to time. I did pair the pancakes with some delicious OJ in my Daddy’s Grandparent’s pitcher found in their house in Decatur, Texas. It is always nice to have a little piece of Texas in my small kitchen in Jersey.
Yields 8-10 medium to large pancakes.
1 1/2 cups all-purpose flour
1 1/2 tsp. baking soda
3/4 tsp. baking powder
1/4 tsp. salt
2 tsp. sugar
1/2 cups cornmeal
3 cups buttermilk
3 tbsp. melted butter
1 egg
Mix all dry ingredients first, then add buttermilk, melted butter, and the egg last.
Pour batter on griddle or skillet. Flip after bubbles appear. Cook until golden brown.
